Instant Pot Galbijjim

1. To an Instant Pot, place the cleaned ribs and layer the radish, carrots, onion, scallions, and chilies.
2. Whisk the sauce ingredients together and pour over the meat.
3. Close lid. Set to manual/high pressure for 35 minutes.
4. Allow a natural pressure release for 15 minutes, then vent the remaining steam manually.
5. Use tongs to remove the ribs and vegetables into a serving.
6. Optionally, skim off any fat left on top using a skimmer, fat remover, or a piece of bread.
7. Press sauté and let the liquid boil rapidly for 5-10 minutes until reduced by 1/3 to 1/2.
8. Pour the thick, syrupy liquid back into the bowl now and drizzle with a touch more sesame oil.
